WHAT I EAT IN A DAY - Easy Vegan Summer Nachos | Cook with Lunch Recipes

Hiiii friends! Sorry this video is a day late, been trying to catch up on work with a hectic schedule atm! Hope you enjoy the video :D


BREAKFAST: Sweet 'n' Savoury
- 1 large frozen banana
- 1 handful frozen strawberries
- 1 heaped tbsp vanilla coyo (*)
- 1 tbsp cacao powder
- almond mylk to desired consistency
- 2 toasted pieces of oat sourdough
- 1/2 an avocado, mashed
- 1/4 lemon
- flax seeds to serve

LUNCH: Summer Nachos
BEANS:
- 1/2 can mexican beans, washed
- paprika, garlic and salt to desired taste
- 1/2 packet corn chips
SALSA:
- 1/2 head spring onion
- 5 cherry tomatoes
- 1 mango
- juice of 1/2 a lemon
CASHEW CHEESE:
- 1/2 cup soaked cashews + the water they soaked in
- juice of 1/4 lemon
- 1 clove of garlic
- 1 tbsp natural coyo (*)
- 1 heaped tbsp nutritional yeast
- pinch of pink salt
GUAC:
- 1/2 an avocado
- juice of 1/4 lemon
All served with fresh rocket, lemon and flax seeds on top

SNACK: My fave heheh
- 1 heaped tbsp chocolate coyo (*)
- handful of fresh strawbs

DINNER: Falafel Burgers
- 1/2 Woolworths falafel mix
- 2 oat sourdough rolls
- handful of spinach
- 1/8 cucumber, sliced
- 4 cherry tomatoes, sliced
- 1/2 an avocado, mashed
